Vinification

Mechanical harvest of Gamay grape harvest.
The grapes macerate in stainless steel vats for ten days to extract especially the fruit and the tannins without excess.
The must ferments in vats under temperature control with indigenous yeasts from the vine. The base wine undergoes its second fermentation (malolactic fermentation) to obtain a “red sparkling” less lively and fuller in the mouth. Champagnisation is carried out by a second fermentation in the bottle in our air-conditioned cellars.
